Pasture-Raised Beef

We are fortunate to have a local butcher who still dry ages his beef. Our beef is allowed to hang in a dry, refrigerated locker for 7 to 10 days before it is converted into various cuts. This technique allows two things to occur. First, moisture evaporates from the muscle creating a greater concentration of flavor and taste. Second, the meat’s natural enzymes break down the fibrous, connective tissue in the muscle, making it more tenderized. The alternative, wet aging, used by virtually all meat packing plants, takes only one day. The beef is washed, cut, and vacuum packed all in a day.

CowsOnce again, we believe the extra time, and the 10 to 15% weight loss due to shrinkage associated with dry aging, is worth it. Once you get a taste, we believe you'll think so too.

With a beef share, you’ll get meat delivered once every four weeks. Beef shares come in 4 sizes: mini (5-6 lbs), small (10-12 lbs.), medium (15-18 lbs.), and large (20-24 lbs.)

When you become a subscriber, technically you and other subscribers will be buying a portion of a live steer (also called buying “on the hoof”) from our farmer. We'll arrange its processing and delivery, however, you won't receive all of your meat at once. Instead, we'll divide the cuts between our subscribers, keeping track of which cuts each subscriber receives. Over the course of the season, your distribution of cuts will be in the same proportions as they occur in a whole animal.

The cuts you’ll receive are:

  • Steaks (Porterhouse, T-bone, Ribeye, Sirloin, and Hanger)
  • Short ribs
  • Roasts
  • Ground beef (about 40% of the total)
  • Soup bones (don’t let the name fool you – they have lots of meat on them).

Again, you and your fellow subscribers are collectively buying this beef "on the hoof", and then paying us for completing all the administrative aspects and shipping and delivery fees associated with this service. This equates to about $6.25 to $7.75 per pound for all cuts, depending on the size of your subscription and your location. Please refer to our Pricing-at-a-Glance documents for more details.
