Pasture-Raised Meats
Beef, Poultry, Pork, Lamb, and Trout!

We have one overriding belief when it comes to our animals, namely that they are raised in natural, stress-free environments, without the use of hormones or antibiotics. That means that our steers, hogs, chickens, and sheep are free to roam on pastures, and our fish are free to swim in clean, clear, spring-feed pools. We know that industrial agriculture dictates that these animals be confined and caged, resulting in contaminated and unhealthful conditions. At Horse and Buggy Produce, we believe that happy animals make happy customers, besides, we know it's just the right thing to do.

Beef

"I just wanted to tell you that I had the best steak I have EVER eaten last week. I am from Iowa, where people are known to eat steak for breakfast, but the sirloin steak from HBP was by far the best I have ever eaten. My kids loved it too, and kept asking for more (which is a compliment since they are at the picky eating ages of 5 & 3). "

Our steers are raised by one Mennonite farmer. From early spring to late fall they feed on his spray-free, ryegrass pastures. During the winter, they only eat ryegrass hay baled from these same fields plus a small suppliment of insecticide-free corn and soybeans grown by this same farmer. Grass-fed steers take about 1/3 longer to grow than feedlot-raised, exclusively grain-fed animals do, but we believe the extra time is worth the leaner, more healthful meat.

We are fortunate to have a local butcher who still dry ages his beef. Our beef is allowed to hang in a dry, refrigerated locker for 7 to 10 days before it is converted into various cuts. This technique allows two things to occur. First, moisture evaporates from the muscle creating a greater concentration of flavor and taste. Second, the meat’s natural enzymes break down the fibrous, connective tissue in the muscle, making it more tenderized. The alternative, wet aging, used by virtually all meat packing plants, takes only one day. The beef is washed, cut, and vacuum packed all in a day.

Once again, we believe the extra time, and the 10 to 15% weight loss due to shrinkage associated with dry aging, is worth it. Once you get a taste, we believe you'll think so too.

Our beef subscription offers half and full shares. When you become a subscriber, you will buy a quarter or eighth of a live steer. We'll arrange its processing and delivery, however, you won't receive all of your meat at once. Instead, we'll divide the cuts between our subscribers, keeping track of which cuts each subscriber receives. Every two weeks, you'll get a delivery comprised of different cuts, about half of which will be burger. In so doing, you'll get your quarter or eighth steer over the 28-week period.

Both full and half share subscriptions will consist of the following cuts:

steaks
filet mignon
ground beef
soup bones

Technically you are buying this beef "on the hoof" (that is, as a live animal), and then paying us an additional administration and delivery fee. This equates to about $6.25 per pound for all cuts for a full share; $6.75 per pound for a half share.

A full share will most likely yield about 100 - 120 pounds of beef.

Poultry

Cluck, cluck . . .

Our organic chickens are outside in fields all day long, scratching in the dirt, eating bugs, grubs, and worms as nature intended. Of course, they are fed a certified organic ration of grain as well.

As with our beef, we think once you get a taste of our broilers, you’ll never be able to go back to “store-bought” birds again.

As a full subscriber, you will receive one broiler every other week (half subscribers, one bird every fourth week). Our chickens will weigh about 3 to 5 pounds, and cost $2.95 per pound for full subscriptions; $3.25 for half subscriptions.

We'll have turkeys available for Thanksgiving. Like our chickens, they're raised outdoors, and you can order them either fresh or frozen; organic- or non-GMO-grain fed. Orders will be taken in late summer.
